OBS NDI support

Help!! We run a small home Scripture reading ministry. I have novice experience as a sound/video tech from church service volunteer work. Any help anyone here could give would be greatly appreciated. At this point I'm even willing to pay someone for their expert knowledge if need be and I am pointed in a trusted direction.

I'm running OBS from a Macbook Pro (from which I just upgraded to Big Sur by a clean install, then backup from Time Machine including the previous OBS files) through NDI (cat 5 thru network gateway) to OBS on a Windows PC (W10). I am sending data from Propresenter 7 which includes 2 mics by usb input to the Mac and no video camera(s) - media includes basic text slides and short videos with sound. I also livestream from the OBS on the Windows PC. I was using iShowU Capture on the Mac to capture and route all audio through a multi-output. Both OBS' and ProP7 are up to date.
Here's my dilemma... after I upgraded to Big Sur and started testing to make sure everything still worked correctly (no livestream), my audio (and videos) on the receiving Windows PC is very jittery. I have combed through all the resolution, audio, etc settings on both OBS devices and everything making slight changes one at a time and no changes. The video and audio are rendering fine on the source Mac. Again, the signal is making it through to the receiving W10 PC through OBS, just now it's very jittery.
Is it possible some of the MacOS backup files got corrupted or are not compatible with Big Sur anymore? I hate the thought of uninstalling OBS and reinstalling it as I will have to note all my settings first, but it's doable. At this point, I feel it's my next step.

One important rule - it works, don't change it.
I'm not expert on Mac, but check NDI version on both computers.
I upgraded to Big Sur for a different reason. I also use my Mac for personal use as well. But thanks for the advice. Not sure how to check the NDI version since it's a plugin and part of OBS?
