OBS Minecraft Recording Lag

I've recently started using OBS Studio, and I like it because of how the features allow you to do many different things. My only problem is lag. When I record things as a test, such as my desktop, clicking through random things, and going to task manager to check my GPU, there is barely any lag. When I record playing Minecraft, the lag brings my average of 250+ fps down to around 70. My GPU and CPU goes mental, and it cuts randomly (I don't know the word to describe it). Can someone please help me find the right settings?
My GPU is a NVIDIA GeForce GT 710
My processer is a Intel(R) Core(TM) i5-4460 CPU @ 3.20GHz 3.20 GHz, I have 12 gigs of RAM,
A 64 bit operating system, I posted an image of my upload, internet, and download speed, my ping, and I cut off my ip (private) by the way.

Please let me know if you need any more information. I went through a ton of different articles of other people's problems such as bitrate, and I am not sure if I even have the proper bitrate needed. All I really want is less lag and less spikes.
