Honestly I'm not really sure what to do at this point with my streams! I've tried XSplit and switched to OBS and I'm still not having any luck with the issues that I've been having. I've looked at other threads and still can't come up with a valid reason as to why my streams seem to lag even though my ping is at ~50 with a few spikes here and there. I've tried streaming at various bitrates but to no avail.

Here's a log from what should be my last few streams just testing out the bitrates. If I've missed something just let me know - looking for any input on what could be causing my stream to stutter/lag. Thanks!

Well just looking at your log, your system has a touch of trouble keeping up with your current settings.

But it seems that your issue/concern is more about your internet connection. Have you tried the TwitchTester?

Use the Twitch Bandwidth Test to find the best Twitch server to stream to. Set Duration to Medium. You can uncheck any regions you're not in. After the test runs, click the Share Result button to upload a screenshot, which can then be copied and pasted here. Here are the results for that test. My fiance usually has his own Twitch up (not streaming, just watching others or myself) when I'm streaming if that factors into it. I'm honestly not sure what settings would be optimal to run at this point given my current setup. Any tips would be appreciated!

As to the TwitchTest results, you generally want an internet connection with a quality of at least 80. You have a few that are close, but none that hit the minimum. Also your RTT is a bit high regardless of the quality. That said your bandwidth isn't too bad.

Also remember that sufficient and even lighting can make a cheap camera look a ton better.

Depends... The internet varies, as does your connection to different end points on it. Maybe when you ran that test your connection was at it's best... or maybe it wasn't. I can't say from here.

What I can say is that you reported no issues with your last stream, so if you're streaming without any problems then stream, and don't worry about it. If you do have issues, then consult this guide: https://github.com/jp9000/obs-studio/wiki/Dropped-Frames-and-General-Connection-Issues
