How do turn on mouse cursor?

Use Display capture. OBS cannot capture the mouse in other modes due to an OS limitation.

As for the other questions... more information is needed. What are the specs of your iMac? What game or games will you be playing, and what capture method will you use? How much upstream bandwidth do you have?

The best way to determine what settings will be best for you is to do a lot of testing, but that information would help determine a good starting point.
