Do you happen to use the win-capture-audio plugin? There are more reported crashes of that, similar to yours.
You could try to use OBS Studio without the plugin to see if that helps to avoid crashing. I don't know what program files are added of modified by the plugin, so you might need to do a fresh installation. Close OBS, rename the current program folder to ie. C:\Program Files\obs-studio-old and download and install OBS Studio again. Your profile and scene collection files will not be touched this way.
