The log file has no output session so not much you can say about it.

Display capture must be always on its own separated scene as it interfere with game and window capture.
You are using a non standard resolution, which may cause issues on itself, like need more resources and time to encode each frame. Too keep up and not lose frames the encoder simple use less data for each one, dus pixelation.

No, not that one.
Do this. Restart OBS, now do a recording or streaming (what you want to do) for no less than 30 seconds where the issue is present, stop the recording / streaming. Now look inside Help menu and upload the current log file. Copy the link and paste it in here.
