OBS 26.1 Running on Windows-where is the elusive Pause button

I do not see any sort of PAUSE button next to the stop recording button. It says I have no updates. I was looking for a little spot with two horizontal lines like some other guide said.

You cannot pause if you're recording with the stream encoder. Pick a different preset for recording.

Um, where are the choices to chose the presets. I make tutorials for my assistants using this, so I am a total novice. I am not streaming or using the Start Streaming button. OMG I FOUND IT! Now if I can only do it again!

Use anything other than "Same as stream".
