Try Game Capture and then crop the image to the center display:

First reset the source to its default size by clicking on it and pressing ctrl+r. Then hold the alt key and drag the red box around the source you wish to crop. The sides will turn green to indicate they are cropped.

Make sure your Windows 10 display resolutions are set correctly (i.e. Start | System | Display | Resolution | 1920x1080). Set all three monitors to the same resolution. Make sure you set the main monitor to be one where you play games (i.e. Tick the Make this my main display checkbox).

Then, create a Display Capture source. Name it Middle Monitor. Make sure it is the same monitor as what you setup to be the main display.

This works for me on my 4 screen setup.

This doesn't work with surround. Surround spans all displays into a single large display.
