Is there any way that I would be able to use a older nvidia driver (347.09) and use nvidia nvenc to stream or do I need to update to the latest version? I'd really prefer to stay away from the newer drivers.

I don't understand why you wanna stay away from newer drivers.. some freaky guys program these new drivers with a reason! they want to make it more stable, more efficient...
When you have the option in OBS to stream with your nvidia card, try it,
if not, I would say it's not possible with old drivers.
