Players like VLC only play back one audio channel at a time. Choose which track to playback from the Audio menu, under the Audio Track menu item.
If you have recorded multiple audio tracks and want to see or play back all of them at once, import your file into editing software that supports this (FCPX, DaVinci Resolve, Sony Vegas, etc).
