For some reason in obs preview I get audio but when I record videos I get no audio at all, how can I fix this? (For example, My capture card shows that my Xbox audio is being picked up, I hear it on my tv speakers and my headset but I can’t hear it on videos that I record, my mic won’t even work how can I fix this?

Simple mode streams Track 1 only. No selection available. It can still record multiple tracks, as shown here.
You can mix multiple things into the same track, but the tracks don't mix with each other. They're for alternative audio that can be selected on playback, like different languages, descriptive audio, etc. Or just to keep things separate to edit later. Track 1 (again, by itself) is usually the default selection, if you just open the file and play it.
Output goes to the Track selection, and then from there to the stream and recording.
Monitor goes to the physical device.
