need settings help for recording lectures for online students

I will be teaching online college math classes this fall due to COVID-19. It looks like OBS will be perfect for me to record lectures that I can then post for my students. The lectures will be some video and audio of me talking, but most of the lectures will be display video showing me writing on whiteboard software (OneNote) while the audio will be me talking while I'm writing on the whiteboard software. I would like to have decent video and audio quality while trying to keep the file size down so that it's easier for students with poor internet to download the videos (some of my students live in rural areas with not-so-great internet). I have no idea, however, what settings to use for recording in OBS. Any settings suggestions would be very helpful! Thx!

This is also what I am look for to use OBS with OneNote.
The one thing stopping me from moving over to OBS from XSplit is window capture of OneNote.
