I mainly stream Overwatch, And it drops alot of frames, would like some help figuring out what settings would be best to stream overwatch

I sometimes stream pubg,and playing that is like a slideshow for viewers

You only need a game capture per scene collection.
Thay can collide each other.

So, better only one game capture for all.

18:17:11.430: Output 'adv_stream': Number of lagged frames due to rendering lag/stalls: 43 (0.1%)
18:17:11.430: Output 'adv_stream': Number of dropped frames due to insufficient bandwidth/connection stalls: 3661 (6.4%)
18:17:11.431: Video stopped, number of skipped frames due to encoding lag: 12105/56917 (21.3%)

Rendering lag: reduce ingame graphics. OBS uses same cores as your game to render frames
Network issues. Maybe 5000 kbps + 160 kbps audio + game is too much for your connection.
ENCODING LAG: you CPU can´t do it.

REDUCE to 30 FPS (48 fps ????? ) and try again

60FPS ultrafast (prior was superfast) makes things a little better.

With 4 cores, better go for 30 FPS
