Question / Help Need Help Setting Up OBS Studio

OBS Studio is very new to me as a Youtuber and have tried using many different recording software and never have I ever come across something so confusing and difficult as this. But unfortunately, I am on a budget after spending close to $300 on equipment with me and my four friends and we have exerted all our efforts in stating a channel from the ground up as most people often do. I have various questions and would like help with it as soon as possible.

Computer Specifications:
-MacBook Air 13-Inch 2017 Model
-1.8 GHz Intel Core i5

Equipment Specifications:
-Mypin HDMI Capture Card 2.0
-Blue Yeti Microphone
-Xbox One S

1. The dropdown menu and stuff is so difficult with everything taking up room on the screen which makes me nervous as to if would ruin the recording when I port it from the file onto YouTube

2. I am unsure as to how to start recording, it took me and my one friend 3 hrs trying to comprehend how to operate the thing and the farthest thing we got close to it working was connecting the capture card to the tv and my computer and managing the audio software of our Blue Yeti Microphone and the audio I guess from the Capture Card itself as it was an option, I believe in either the Audio Internal and Audio External.

3. Another thing I am somewhat confused with is if the audio from our microphone will overlay the audio from the game on the Capture Card or the audio from our microphone itself. I mean there is a mic input on the Capture Card and the Blue Yeti, but I am unsure whether this would affect the programming of the recording software running?

4. Also, I've seen that OBS Studio has a lot more options on Windows than it does on any Apple Product and to me, it does not make sense why one wouldn't just have the same amount as the other. Like for instance, take into consideration the audio adjustments I've seen that you can adjust the sound being projected by whatever type of sound equipment you're using. But on my MacBook, there is nothing even remotely close to what I've seen other people being able to use on other platforms.
All I want is someone who knows how to use OBS Studio to show me and my friends how to run and operate this system and get even a small understanding of how to get it functioning.

-I hope I was not annoying to anyone who might help me and my friends in our efforts and all I am asking for a little bit of help to figure out how to start recording/streaming games and videos we have planned for making this year.
