Please read and follow directions and recommendations on the analyzer:

Unless you need to record several audio channels for a latter edition, keep it in simple output mode. Run the Auto-configuration Wizard and apply the settings it gives. Do not change this settings. Restart OBS. Yes, restart OBS before you do anything else.
Now, please, test it as is, doing all you normally do for no less than 30 seconds. Please take more than exactly 30 seconds.
Look inside Help menu. Upload the current log file and paste the url to the log in here. Click on the Analize button to start troubleshooting common issues.

I analyzed and it said to turn off gpu hardware accel. I didn't know if you needed the log too so i'll post it anyways https://obsproject.com/logs/Hh23VDaLLMSjbwTJ

The videos should look just fine. Now you need to set a better quality in order to compare how it looks.
It all depends on what you're recording and your expectations based on the limitations of the hardware.

For games it's always recommended to use Game Capture or Window Capture, not display capture.
