Question / Help My OBS recordings are consistently choppy and I can't figure out why?

Hey guys, I've been searching the internet for a solution to this but I haven't found anything to help me specifically. So whenever I'm previewing the game or doing anything else in OBS it is fine, but when I record (seemingly on any setting), the recording is choppy and stutters. Now this mostly happens with Rocket League as I tried it with Project 64 and it was fine. I'm only using OBS to record game footage for Youtube so I want the quality to be pretty good and consistent and I want to find settings that work for pretty much any game so I don't have to keep going in there and adjusting them. Any help would be great!

I'm running OBS Studio 23.2.1 on Windows 10

Wow ok, I don't know exactly what happened but I started recording in flv then remuxed it to mp4 and downloaded vlc media player for it and it's as smooth as butter!!!! I also had the recording on NVENC with rate control set to Lossless so that probably helped. Weird that I still don't know what the problem was. Could it have been my playing the mp4s in windows?

So I forgot that Lossless is huge in file size, so I was playing around with the other settings and the recordings are still choppy. I'm trying to get the file size down while keeping quality. I'd imagine there'd be at least some other option besides Lossless to achieve this?
