My mic is picking up audio from my desktop despite not even having any sort of desktop audio capture available (the other audio one is Minecraft)

When you say "audio from my desktop" do you mean the stuff coming out of your speakers?
Zoom does a bunch of processing so that audio you hear from other people is ignored by your mic, and what you speak into your mic doesn't come out your own speakers. OBS doesn't do that, so anything coming out of your speakers is likely to get picked up by your mic (at least to some extent depending on how loud your speakers are and how directional your mic is).
If you are using a mic with OBS you will almost certainly want to use headphones rather than speakers.
