My Game Captures Frequently Have No Video

This is very frustrating. I always get audio when I record a Game Capture, but frequently the video is black.
I usually Record in mkv format, but have tried them all. Encoder is set for Hardware (NVENC), but have tried every option. I am using OBS Studio v.26.1.0

OS: Windows 10 (64-bit)
Processor is an
i3 Quad Core w/16 GB RAM

Graphics Card:
Nividia GeForce GTX1660 Super XLR8 Gaming OC Edition (Overclocked) w/6 GB RAM

Tonight I tried 7 games. Only 2 captured video as well as audio.

Last night I updated my GeForce drivers via The GeForce Experience. Now I can record video of games that can run windowed or can launch on my right display. Games that can only be launched full screen on the left display the video still doesn't capture.

Yes, my PC is in a tower. :)

OK, I disabled my Intel Graphic Adapter. That caused Display 2 to go dark. I launched OBS Studio and then Steam, and then the game I wanted to capture footage from. Everything was then displayed on Display 1. Doing it this way OBS Studio couldn't even find the game, so I (re)enabled the Intel Graphic Adapter. I'm back where I was before tonight. I think my having two displays is confusing OBS somehow.
