More Cpu Use With More Cores?

Hello everyone, I would first like to state that I had a 1500x originally and now i have a 3600x.

Before I get into everything I may need to give some background information. I used to record in VR and the video looked good and was at a stable frame rate for 4 cores. I never changed the settings before I switched so i'm not sure what it is.
Now I have 6 cores and you would think it would use less of my cpu, but no, My old cpu would be at 7%ish to 12% (I think) of usage, now it is almost to 20 and almost to 25% which is not good at all, the video is also somewhat choppy and did not use to look like that. I don't know what happened but if anyone knows why please help.
I'm not sure what settings I used to use but it was high quality 60 fps gameplay.

The version of Windows you are running has a limitation which causes performance issues in hardware accelerated applications (such as games) if multiple monitors with different refresh rates are present. Your system's monitors have 2 different refresh rates, so you are affected by this limitation.

To fix this issue, we recommend updating to the Windows 10 May 2020 Update. Follow these instructions if you're not sure how to update.
2. Run OBS as Admin

3. Your log contains no recording or streaming session. Results of this log analysis are limited. Please post a link to a clean log file.
To make a clean log file, please follow these steps:

1) Restart OBS.
2) Start your stream/recording for about 30 seconds. Make sure you replicate any issues as best you can, which means having any games/apps open and captured, etc.
3) Stop your stream/recording.
4) Select Help > Log Files > Upload Current Log File. Send that link via this troubleshooting tool or whichever support chat you are using.

I saw at one point it hit 25 percent usage and it could only capture 57 frames and not a smooth 60 fps. The video also looks choppy but i'm not sure if it's because of that 57 fps on obs.

1. Run OBS as Admin.
2. Your GPU is maxed out and OBS can't render scenes fast enough. Running a game without vertical sync or a frame rate limiter will frequently cause performance issues with OBS because your GPU will be maxed out. OBS requires a little GPU to render your scene.

Enable Vsync or set a reasonable frame rate limit that your GPU can handle without hitting 100% usage.

If that's not enough you may also need to turn down some of the video quality options in the game. If you are experiencing issues in general while using OBS, your GPU may be overloaded for the settings you are trying to use.

Alright, thanks. But my question is, why did this start happening now? I was fine with my old cpu with High Quality settings.
