Manage multiple resolution settings

Sometimes I have to record in HD, sometimes I have to record in 4k, sometimes I have to record two monitors side by side. I have tried profiles but they memorise everything except the monitor layout and output resolution.

Profiles do definitely contain the output resolution, but they don't contain your scene and source layout. These have their own "profile" settings: they're stored in Scene Collections. Check the Scene Collection menu. For your case, you probably need to change both profile and scene collection and make your own scene layout specific to each profile.

And can it be done in one step? Going through 3 menus or 4 the difference is minimal

You need to change the scene collection in addition to change the profile. I guess that's not much additional work.
