So one of my biggest problems with OBS is not being able to use Multiple audio tracks. Usually, I would just use the indistinguishable quality present in the output tab and the video would look great, but it's impossible record with more than one audio track when i am in the simple output mode and I like to edit my audio when I'm editing.
I would just go into the advanced tab to use it, but I dont know anything about birates or encoders. No matter how much I mess with it I am never able to match the quality I get when I use the simple output mode. Maybe you could add more audio settings in the simple output mode.
