macOS with Blackhole: Desktop Audio only works 1 time - then I need to reinstall OBS

I have an m1 MBA and I am using the https://github.com/obsproject/obs-studio/suites/7290271441/artifacts/293943055 build of OBS.

My main use case is recording Zoom/Google Meet calls.

On WIndows and Linux, as a 20 year user of both, I never had issues.

THe issue I have with macOS and OBS is _weird_:

When I install OBS for the first time (after installing Blackhole, otherwise there aren't even any devices to chooses from except (Default))

I am able to record Desktop Audio after:
1. Creating a Multi-Output device that contains both my target output device and the blackhole 2ch virtual device

This works only ONCE. The 2nd time (I quit OBS after the recording is done) there is no audio signal from the Multiple Output device nor any other that I select for output. OBS stops to receive any input signals from any selected output device. THe microphone (I always use the built-in one) also does not deliver signals anymore.

I am looking for a solution. It is inconvenient to uninstall and reinstall OBS every time I anticipate I might have to record a call.

Can anyone help?
