I have some unencrypted BluRay discs I'd like to digitize. I'm assuming with the right capture hardware, OBS can capture the video, and I'm also assuming that if I have multi channel analog output from the source, with a multi channel analog to digital audio device, OBS can capture all 6 channels of a 5.1 stream as individual audio channels, and capture both audio and video at the same time.

Past that, once I get all that captured, can OBS output as a single file the video with the 5 discreet audio channels embedded in the video file?

What am I missing ?
 
Why are you trying to play and capture the content that way? If the discs are unencrypted, you should just be able to copy / transcode the content using FFMPEG or or Handbrake or something like that. (Not that I can tell you how, but that seems to be a far more direct route than outputting and re-capturing something that's already digital and unencrypted).

now, if you have some ancient Laser Discs, those are analog and would need to be captured and digitized. But BluRay are already digital, there's no need to digitize them again.
