After selecting "start recording", my screen to record does not go live (enabling me to do a screen record). I do not do gaming.

Sorry, not sure what you mean 'does not go live'
When you hit Start Recording, whatever you've set up in OBS as Sources and configured to display, is what will record
If one of your sources is a Display Capture, and that source is turned on/enabled, then the content of the screen (in general) will be recorded. Having multi-GPU setup can complicate matters.
The method of screen capture (be that Display, Window, or Game capture) can influence what is, and is not 'captured'
