Jittery recording on Linux Mint OBS

So I have been trying to get this figured out all day.
I used to run a windows machine about a year ago and I used OBS on it with no issues. When I swapped to Linux, any OBS recording became very jittery and stuttery. I have tinkered with the settings a lot, but nothing seems to make it any better. I tried to look through the log files, but I genuinely have no clue what I am looking for.
Any help at all would be greatly appreciated. I want to get this figured out today if possible.

A logfile that has a recording or streaming session in it would be more useful.

Your video looks fine to me. Are you sure it's not a playback problem?

Video looks good here too. I notice that at 720P and 1080P it is only available at 60FPS . You might want to consider whether the game content is actually 60FPS
