Question / Help Jittery/Jerky not smooth video and streaming

I am relatively new to using OBS. My understanding is that as long as you have higher fps than your capture frame rate, the video or stream will be smooth. I have tried to capture a few games, all of which I get over 100fps in game but the 60fps capture is very jerky/juttery. The video files seem to actually be 60fps but they are not smooth at all, almost as if the frame pacing is not right. In-game on my monitor while I record or stream the game is butter smooth. Also, the preview is just as jerky as the final stream or video file. Here is my PC specs:

i7 5820k @ 4.2 GHz
Asus Strix GTX 1080ti
16 Gb DDR4 3200MHz
Samsung 850 Pro SSD

Main Monitor: Acer XB271HU (Gsync, 1440p, 144Hz)

OBS says no frames are dropped, and the fps counter at the bottom always says 60. Is the only way to get smooth video to limit the game to 60fps? If so, how are these big streamers capturing their 144hz 1440p monitors with unlocked framerates? their streams are very smooth
