Is there any way of my regaining my previous OBS visual settings, without resetting my PC to a previous state? as I accidentally lost them whilst I was adjusting my camera focus? This image shows what I was left with after the error.

Are these settings at your sources? Then have a look at File, Show Settings Folder and go to basic, scenes.
The .json files contain your scene collection.

So save both the .json and the .json.bak file to another location at subfolder 1. Close OBS Studio, now the files are updated. Save that again to another location at subfolder 2.
You should the able now to put the saved .json.bak 1 back and rename it to .json to restore previous settings.
