is there any option to reset all setting like make obs as it was downloaded

Just create a new profile with Profile->new and remove the old profile. New profiles start with default settings. The scene and sources are easier: delete all scenes until there are none.

Create a new Profile, and a new Scene Collection.
No need to delete the existing ones unless you want to.
