Is the quality of these videos, reflective of the settings I have used?

Dual PC, I use 7400kbps, CPU preset slow (3900x) 1080p60 and a HD60X capture card (passthrough 120hz). I see some streamers (mostly partnered) have pretty good quality on stream, regardless of Twitch's bitrate limit. But I am not sure I get a similar look.

What's surprising is I even get a worse quality on Youtube, using 15,000kbps (I understand Youtube compresses the video after, but its still pretty bad)
