Insane lag spikes while recording Games on OBS

Hey guys I'll start off by saying i am super noob at this and am learning as i go, So if any pro is feeling generous please HELP!! lol

Here are my Specs.
- Processor AMD Ryzen 5 2600 Six-Core Processor 3.40 GHz
- installed RAM 16gb
- WIndows 10 UPDATED
- Graphics Card NVIDIA GeForce GTX 1660 TI
If you need additional information let me know..

I originally was using the Simple regular presets, but noticed that my gameplay would have Severe lag spikes on the video when i play it back. I have no way of knowing this while playing because i experience 0 lag or dropped performance while playing.

This seems to be specifically with the recording and something going wrong in the back and, and i cannot figure out what. ( I only have OBS and the game i am playing running during this time)
I was able to find a video teaching me how to tweak the advanced tab and i provided a image below of my settings.

At this point i will sacrifice frame rates, or graphics, whatever it takes for the lag spikes to stop as i use the content for B-roll on YouTube and it is useless with as much lag spike as i get, which is about every 2-3 seconds constantly, and even more witnessing a grenades' explosion while Playing Halo.

As of 30 minutes ago i realized my computer was only using 8b ram instead of the 16gb due to a incorrect insertion of the Ram card.
When i fixed the Ram and noticed a EXTREME speed increase on my PC...... the lag persist the exact same which i cannot fathom how 8gb more ram did nothing.

At this point i believe i may be tuning the specs higher then the specs of my rig and if so what is the best setting to use?

Addtional information:
- I use a Q60 43 inch 4k TV as my monitor 1
Resolution is 4K 4096x2160 (if i use any other resolution, the screen does not fit fully and leaves black bars)
My second monitor is a RS95 - An OLD 10-15 year old HD 43inch RCA tv, It's old but still works like a charm (Nokia of Tv's)
Resolution is 720p 1176x664
I save my videos to HHD, but i play on a external SSD Gateway brand.

My main monitor is the better one of course and i play my games on this one. I'm trying to record Halo infinite which i know is a new high graphic game, but i don't get why specs like mine would give me the lag issues it is. I also play Naruto to Boruto Shinobi Striker, which is not that graphically intense yet i get the same lag spikes.

I would greatly appreciate any and all help as at this point i have NO IDEA what to do :(
