I just cant get fullscreen

Hi, apologies in adavance as i'm probably not going to explain this corrrectly and to me it sounds so basic that I cant believe that i'm asking it.

I can't seem to record my videos in full screen 'mode' no matter what resolution I change OBS to.

What i'm trying to achieve is this:

Is there something obvious I could be doing wrong?

It seems you're trying to capture video from some video capture device.
To capture and record exactly what the device will output, first reset any transform changes you might have done: Right-click the capture device source->Transform->Reset transform.
Then set canvas and output resolution to the capture device resolution: right-click the capture device->resize output (source size).
Now canvas and output resolution are the same as the capture device resolution. This will give best quality, since there will be no rescaling involved.

This small square is correct, you're probably capturing VHS or other analog low resolution material. It's not big enough to fill your preview.
Save exactly this as video. Let the media player do the upscaling to your screen. If you create a 1920x1080 video from a 640x480 source by bloating it up to the higher resolution, you're just adding bloat but no picture information, so don't do this. It's the media player's task to adapt the resolution of a video to the viewing device by rescaling on the fly.

To make the preview fill the space present in the OBS app, right-click the preview->Preview scaling->Scale to window. This simulates the task of the media player.
