I have some questions about capturing video from VHS in OBS.

I am trying to use OBS to capture footage from VHS Tapes and I have run into several confusing things and I would like some help figuring this out.

I am basically wondering what the best settings would be for recording.
Specifically what is the best resolution, encoding settings and if things should be coming in progessive or interlaced.

My current setup gives me a good picture is,
Windows 10 PC
Hauppauge PVR 2 with the VHS Input coming in thru component cables from Zenith Dvd-r/VCR Machine set to 480 I output.
The video comes in a 720x480 interlaced and looks okay.
I have the recording settings set to indistinguishable quality since it seems to be no different then lossless for my purposes. (I tested and saw no difference worth the file size).
File format .mkv

The problem is I have read several guides online and have found some evidence that say things that seem contradictory to me.

I have read that I should capture at 360X240 since that supposedly is the max resolution of a VCR and anything more is overkill, but at that resolution things look more pixelated and it seems that I would have to downscale in some form as my capture card is stuck at a minimum of 720X480.

I noticed the resolution ouputed from a dvd is sized 720x560 which I read is actually how it should look because of the aspect ratios? Would it help me to change the canvas to a 720x560 so that I record at an output giving square pixels?

I am using interlaced since I want to record so that I can future proof against any new advancements on cleanup, but I will admit that running the Zenith in progressive scan looks a bit better.

I am wondering if the Hauppauge was actually a good deal, I got it for video game streaming and using it for VHS is a bonus for me, I have a Diamond VC500 but that wasn’t playing well with OBS. I have also heard something about some Hauppage devices do some encoding on the device and that could affect the output, I don’t fully understand that part it just makes me wonder about it’s actual
quality.

My last concern is how OBS saves recordings, it seems I have no choice but to encode with x264 when I save unless I use lossless which gives me a large AVI I can’t play except in KDNlive. But I understand that encoding can lower quality, is there a way to avoid this?

A lot of things I read contradict what I encounter in actual use, could someone clarify what I am missing here, I am rather confused as to how I should proceed.
