You appear to be using multiple Monitor Captures, and in a scene with Game and Window Captures.
Monitor Captures are the LEAST performant capture method, and tend to cause performance issues and other conflicts when in a scene with Game or Window Captures (or other Monitor Captures). If a MC *must* be used, it should be in its own scene with no other capture types.
Beyond that, your logfile contained no recording or streaming session, so captured no technical data to diagnose. We'll need a log from a recording or streaming session at least 30 seconds in length where the issue occurred to be able to provide accurate troubleshooting (beyond the capture conflict information above).
