...and I'd like to share with you what I had to change to fix it for me. I'm not an advanced user, and I get tired sometimes. I may have changed some settings just trying to test things and forgot, so I'm not sure if what I changed was a default, or something I tried to change previously. However -- because my setup is super old, I had to change the encoding to very fast -- but that was not affecting my missing textures problem. I also decided to downscale output - not because that was causing the missing textures either, but because of my aging hardware.
So anyway, what did fix the issue for me -- since I didn't find the information when I went looking for it, was the:
"Allow Transparency" option in the properties for my game capture source. I'm not advanced enough to know what that can be used for, and maybe I just tested it, but it caused major issues. Anyway, it's fixed now, and I can continue seeing what this dinosaur can handle.
