Follow the instructions at https://obsproject.com/forum/threads/laptop-black-screen-when-capturing-read-here-first.5965/ to ensure both OBS and Minecraft are running on the NVIDIA GPU. You'll also want to enable vsync or an FPS limiter in Minecraft.
