How to resize the graphic or video to fit screen

Hi all and thank you for your help.

It feels as if it always takes me forever to insert a graphic or video when trying too size it correctly. Sometimes I cannot even get hold of the red re-sizing handles to resize it. I was hoping to right-click something, click on an option and there is is, 100% sized to either my output video size of canvas size.

Please advise if I am doing something wrong and how is it supposed to be done.
