How to record OBS application screen to record OBS tutorial?

I have learned a lot from watching lots of people on YouTube showing how to record videos using OBS.
I like OBS and have put time into watching free and paid content. I have watched a lot that is useful for work, and other stuff that is less so.
I would like to show colleagues how to set up OBS for a simple recording, but am at a loss to record my OBS application screen.
My setup: work Mac with external monitor and webcam. Headset with mic, Rode Wireless Go Mic, private Mac (was trying NDI, virtual camera).

My basic example:
  • set up webcam with filter to show picture in picture
  • add scene with audio with filters for gain
  • add a scene for browser that shows different pages for presentation
  • add a scene for separate application
I have shown this in a demo, but I would like to record a standalone recording showing how to add scenes with different sources, and configuring the sources.
I don't know where I'm over-thinking this. I am trying to avoid infinite mirror. I want to show the whole OBS application, not the OBS output which I have done to google meet. In my experience, google meet video recordings are low quality, and it can be hard to see (for older people like me) the text on screen.

I am trying to keep things simple, with minimal external hardware to encourage people to dip their feet in the OBS learning pool.
Any suggestions?
