How many cores/threads for cpu encoder and gaming?

Idk if I should buy a Ryzen 7 5800x or a Ryzen 9 5900x. 8/16 cores/threads or 12/24 cores/threads. Will it be good enough to game and record on the same pc? If the quality isn’t that much better from the Ryzen 7 5800x, then I’ll just get that and use my gpu encoder. The reason I’d rather spend more money on that cpu is because I heard that the AMD gpu recorder wasn’t that great (I’m thinking of getting an Rx 6800 XT).

I have 5900X. It's good for up to slower X264 preset. Very slow overloads it. Nvidia card should give you quality as X264 medium. At least that's what Nvidia says, but from my experience, that's absolute bullsh*t.

I can assume I'm all good with 12 cores then?

Depends from game to game ofc. Not every game uses same CPU load. For SLower to slow you should be just fine with 5900X
