How do youtubers uncap minecraft fps and get good quality

Hi, so I was just wondering if YouTubers just have some powerful setups so they can uncap, or what, because some YouTubers uncap and get about 500 fps in Minecraft and that's just weird.
(Not simping, not asking for what they're using, just wondering why?

also is there a way to make obs looking white or like discord instead of a blue screen somewhere?
