High ping when streaming while upload speed seems decent

Hello,

I am trying to set up a stream using Streamlabs and Twitch.
I have tested on multiple games and my ping increases once I turn on my stream if I set my streaming bitrate on anything over 200 really (which gives terrible quality).

I ran several speedtests and they all give me upload speed results ranging from 7 Mbps to 11 Mbps so this makes me think I should be able to at least reach bitrates around 3000.

I have already enabled "Enable new networking code" and "Low latency mode".

Anything that I could be missing?

if you have a stable connection then you have 7 or 11 but not 7 up to 11 upload
Related to your connection type its default you get ping issues by the instability of your connection
