Question / Help High Encoding Issues while recording/gaming on same PC

I have a decent pc I custom built about 2 years ago setting me back around $2,000 in parts total.
Specs:
MB: MSI Z-170A Titanium Edition
CPU: I7-6700K
RAM: 32GB GDDR4
GPU: NVIDIA GTX 1080 (Founders edition)
{I also have 2 hard drives n 1 SSD}
{OS is on the SSD, while my game (Cod:MW) is on a hdd as well as OBS on the other HDD}

With all of this hardware, I should most certainly be able to play my game as well as record at 720p 60fps clearly. right? even though it seems that way it doesn't work which is why I'm here :)

Below is a picture of my recording settings (Dont worry about the audio, I simply split up the tracks so its easier to edit)

My game is set to medium/low on all settings graphics wise, leaveing me around 140fps even in high octane gameplay. And it only lags bc of my internet (thanks to living in a dorm) But every time i alt-tab back to obs to stop a recording session im gretted with a choppy video always caused by "ENCODING OVERLOAD"

Can someone please help to explain to me why my computer is acting this way, let alone how to fix it?
 
What happens if you record capping the game with vsync 60fps, does it also appear choppy?
Also do not use Display Capture... delete that source have it on a separate scene. Instead use Game Capture

Another question, how does it perform with the (new) NVENC I see you are just using the standard NVENC?
Test also disabling the rescale option too

someone on the discord already helped me solve the problem, but thank you. Vsync did work but I preform alot better in the game with a higher fps rate than 75. Just had to make my encoding focus on speed rather than quality. thanks again tho :)

Still wondering why are you not using the (new) nvenc in advanced settings?

Also if you are just recording you are using the wrong settings(what you are using its for live streaming if you have low internet), you need to go Simple > Recording > Indistinguishable Quality - You should not have any issues recording with that having NVENC encoder - .. then yes it will be a big file the recording, easy solution just re-encode using Handbreak to make it really small maintaining near similar quality.

I use the advanced tab because I like to split up all the audio tracks so that upon editing, I can turn my voice down/friends voices up, etc Its all good I did in fact switch to the newer NVENC but its all good now
