Remove or disable all filters on everything. See if the problem still persists. If it does, it's likely not OBS.
But while you have everything off, see if the sound is usable when it works. If so, keep the filters off, and do your processing *after* the recording. Much more flexible that way, because you're not stuck with whatever processing you did before the recording.
Another possible problem point is Bluetooth itself. That's radio. Specifically 2.4GHz, which is the most crowded band there is, and exists precisely because that's where microwave ovens operate and the FCC gave up trying to enforce non-interference. So it could be that you're getting radio interference from who-knows-where, and the gaps are how long it takes your BT connection to reestablish. Try a wire instead.
