Hi,
Apologies for basic question, but I am planning to buy cheap video capture device for my 7 year old who is addicted to gaming YouTube clips, so he can make his own videos.
I just need clarification that I can plug separate devices ie a mic directly into laptop, and a basic video only capture device, and OBS will record both as one file?
Would seem silly to buy an audio AND video card when I don't need to.
Thanks in advance for any help.

Yes sure, that works. You just need to create a scene and add each (the audio and the video device) as a separate source to that scene. You may have to adjust the audio "Sync Offset" in the "Advanced Audio Properties" settings (right click the cogwheel of the corresponding audio input in the mixer) a little to get good lip synchronization.

Excellent, thanks for that.
At the moment we will just be recording his audio, ie him talking, and the video of his gameplay, so won't be showing his face just yet.
Thanks again, much appreciated.

What do you want to record? If you want to record some game or app on the same computer OBS is running on, you don't need a capture device. OBS is able to directly read the frame buffer of the computer. Just set it up with a game capture source (if it is a 3D-based directx game) or with a window capture source (anything else). You can also just grab the entire desktop with display capture.

You need a capture device only if you want to capture from some external gaming device that has its own separate monitor connected with a hdmi cable, for example a console.
