Today the strangest audio issue occured, the audio on my stream went completely distorted and almost "robotic" but ONLY ON MOBILE???
Desktop was absolutely fine, but anyone using mobile could only hear a really strange buzzing sound, I have a short clip showing what was going on (the longer stream is available to watch) but you'll notice on desktop it works and on mobile the audio does not work.
Then get this, If you plug headphones in the audio works perfectly on mobile!
So anyone with headphones in or watching on desktop has audio, anyone watching on a mobile through speakers has a distorted robotic buzzing sound with no other audio.
Even the recording is the same.

Any ideas what on earth this could be?

Check if your 3.5mm connections are plugged in all the way.

When downmixing your faulty audio to mono (1 channel), sound is lost with only a very quiet buzzing sound. Mobile probably only have 1 speakers so stereo is downmixed to mono. Your faulty audio have it in a way where the right audio is negative of left audio, which then results in mostly no audio when downmixed to mono, 1 channel mode. This might be caused by missing ground or 3.5mm line in/out not plugged in all the way in.

Me using headphones sounds quite wrong on your faulty audio, like if the 3.5mm headphones isn't plugged in all the way in.

This is quite hard to understand as I don't know much about audio, but the cables are plugged in all the way, so is it possibly the cables that are the problem? (the cables are rca cables with rca - 1/4 inch adapters) so could be the cheap audio adapters?

You also mention Right audio is negative of left audio, this also makes sense as when I play a video that has binaural sound (left ear right ear) the right ear is always far quieter, but the dials are all in the middle on the mixer, so does this sound like the cables?

For some testing, you could set OBS-Studio into mono 1 channel in OBS Settings, audio. It may turn a mono-only viewer problem (mobile) into everything having problems (stream or record in mono)

But again, fix your audio connections. It is possible you might have faulty audio cables.

If you are able to fix audio problems in mono mode, you can then switch it back into stereo mode.
