There's no encoding session in either log so can't really tell what's going on but here's some suggestions to get things running better.

Run your monitor @ 120HZ or 60HZ if you really do care about the quality of your recording.

05:43:48.231: Game Bar: On > Off
05:43:48.231: Game DVR: On > Off

Disable HAGS
05:33:21.756: HAGS Status: Enabled (Default: No, Driver status: Supported)

Fix your Scene, messy, only (1) Display, Game or Window capture per Scene to avoid interference
05:33:24.370: - scene 'Scene':
05:33:24.370: - source: 'Dead by DayLight Capture' (game_capture)
05:33:24.370: - source: 'Counter Strike 1.6' (game_capture)
05:33:24.370: - source: 'Counter Strike 2' (game_capture)
05:33:24.370: - source: 'Display Capture' (monitor_capture)
05:33:24.370: - source: 'Dead by DayLight' (game_capture)

Sample rate mis-matches & Steel Series Sonar in play.

05:33:23.568: WASAPI: Device 'SteelSeries Sonar - Microphone (SteelSeries Sonar Virtual Audio Device)' [48000 Hz] initialized (source: Mic/Aux)
05:33:23.590: WASAPI: Device 'SteelSeries Sonar - Gaming (SteelSeries Sonar Virtual Audio Device)' [96000 Hz] initialized (source: Desktop Audio)
