Question / Help Game Capture HD60S+ recording in 1080p, but OBS seems to be recording footage in 720p?

Hello everyone, another noob here.
I'm recording through an El Gato HD60 S+, And I've been experimenting in the settings trying to make sure that the colours and quality are as good as possible.
But I can't seem to get the colour and Quality to match what I see on my tv screen at all.

I am using a Macbook Pro 2018, I've got the HDR on on my playstation as well as the 1080p setting, here are my settings in OBS.
I've got all my settings showing below, I just don't understand how in the preview on OBS, the game play will look almost identical, and then I view the recording, and the quality drops off like crazy!

Anybody have any advice for me? Much appreciated if you do!

HDR capture is only supported on Windows with HD60S+ and using the El Gato 4K capture software, recording the HDR footage in HEVC (not H264, it records non-HDR to h.264). Not sure if that’s why but it could be? Probably tone mapping as you watch it in real-tome, but isn’t recording with it...?
