Hey all, so I've been trying to research this problem, and none of the results I ever find are related to my issue.

There's a chance everytime I stream that the Stream AND OBS capture will freeze on a single frame. It also stops all game audio, however the stream is still live and other audio is still present (such as my mic.) Usually happens around an hour or more into a Stream.
Happens especially when I use my Avermedia LGX Capture Card, however this problem only occurs with OBS and not with other software. However I much prefer to use OBS for it being much more reliable in my experience.
It's pretty much killing my streams since I don't always notice it right away and I end up with lost footage and lost viewers when people realise the screen has frozen.
I either have to shut down and reboot OBS or otherwise reset the capture within OBS. Resetting the Capture Card is not necessary.
I also have a separate, unrelated issue where OBS seems to want to suddenly record video in the middle of a stream, without any input on my end (I don't even keep the start/stop recording hotkey bound) and resulting in a CPU usage leak until my Streams become choppy as the CPU is maxed out. I am on a Ryzen 5 1600 CPU, so this is quite a ridiculous occurrence as Streaming takes no more than 20% CPU usage and recording takes more than 5-7% usage. Under normal use the combined CPU usage is around 30-35% for both Streaming and Recording, except when this bug occurs, in which case it will max out the CPU. I *seem* to have a workaround solution, which is to quickly start and stop recording just after streaming. Seems to keep the bug at bay. If someone had a more permanent solution I'd be thankful, otherwise it doesn't really ruin my ability to stream.
To reiterate, both of those issues are exclusive, and my main problem is just that my game capture is becoming stuck or permanently frozen until resetting the capture in OBS. It does not appear to be the capture card as the capture card does not need to be reset. The capture card also has no problems with it's built-in bypass HDMI channel still functioning after the OBS capture is frozen. (Hence why I don't notice the Stream is ruined right away, as I am generally playing through the capture card on it's bypass channel.) It seems wholly to be an issue with OBS, or perhaps between OBS and Windows 10.
I've been trying to stream in 1080p60fps, and thus far is has worked beautifully. I still need to test if 720p still suffers the same issue, and if not, why it's only 1080p causing the issues when all of my hardware is capable of 1080p60fps. This includes the capture card which is advertised as being 1080p60fps compliant.
I've been using this setup for over a year without issues, it's only a recent occurrence (for both issues). (I am considering that it is a Windows 10 problem, but cannot find any solutions)
I have my OBS up-to-date and have been seeing this issue on 21.1.0 and 21.1.2. I also saw it on a previous version that I have forgotten, as I quickly updated it realizing it was far out of date. I've already attempted full, fresh reinstall of OBS and all of my other related software such as the Capture Card drivers.
For system specs:
OS: Windows 10, 64-bit
CPU: AMD Ryzen 5 1600, 6 Cores, 12 Threads, @3.5 GHz
RAM: 16 Gigs DDR4 2400 MHz RAM
GPU: AMD RX 480, 4 Gigs VRAM
