Question / Help Frame drops on recording

So.. I've set up my settings according to this guide which seemed very reliable and didn't hold back on anything:

I initially used the x264 settings because my FPS started dropping after a couple of hours of recording, this varies from day to day, sometimes one hour, sometimes four.
So I decided on trying the NVENC settings instead to see if it would make a difference to my random FPS drops. I now stand with no improvement or difference what so ever. Note that I haven't tried the other 2 alternatives in the link above.

The FPS drops only happen in OBS Studio, the game remains unaffected. Even if it says 58FPS it's noticably less than that, recording files become "choppy" and unconsistent. Audio stays accurate however.
I have my FPS set on 60, so it really shouldn't go lower. It's just as OBS shows FPS going under 60 that everything becomes really bad.

GTX 1080 @2GHz
32GB RAM
X99-s

What can I do?
