I was looking up how to fix this when I randomly tried something. I ran minecraft, but didn't go into fullscreen, keeping it as window instead. I then ran OBS and made a new Game Capture, used capture specific window, and clicked on Minecraft 1.15.2 (the one I was using). IT came up right away, but it didnt fit the entire recording screen. I then went to minecraft and went into fullscreen, and it came up just fine in OBS! voila
