Question / Help Facebook Live performance issues with App Capture

Hi guys

This is my first post, and (although I work in IT so reasonably technical!) I am a complete novice working with video, streaming and particularly Mac, so apologies in advance if this is really basic, or already been covered to death!
I've come across OBS because I am a snooker referee, and have been keen to broadcast snooker matches live on the internet, with live scores overlaid on screen via live connection over the LAN from a computerized scoreboard. After some playing around last week I have got this all working, and managed to broadcast a match yesterday which was (mostly) successful. I just had a couple of issues which might very well be noob-related stuff. I just wondered if these were common/easy fixes?

Firstly - (main problem) the video was quite choppy. If viewed from another device, people walking round the table, or balls rolling across the table look extremely "stop/start" (or what I'd call choppy).
The second problem was that viewing the stream from my MacBook, which is the machine on which I am running OBS and also hosting the stream (in Firefox, in case that is relevant) the video would appear to freeze completely for long period of time, even though this was not the case on - for example - am iPhone viewing the video in the Facebook app.

I was fortunate enough to have access to good wifi so I don't suspect lack of bandwidth being an issue. Speedtest.net indicated I was getting around 80mbps down, and (more relevant) 25+mbps upload.
What I imagine is relevant is that the live scores are overlaid on the video using and Application Capture in OBS. The application is a really quite basic one, which just receives the player names and scores from the computer scoreboard software.

At one point, because the stream appeared to have frozen within Firefox on my Mac, I stopped a restarted the stream using the direct option in Facebook (so not using OSB at all) and it is noticeable that the quality of the stream was much better. Therefore it looks like OBS is causing the issue. I am just not sure where to start with looking at the cause, so any advice would be very much appreciated!
